The cold pasta is a great classic when it comes to summer recipes. Among the many preparations you can choose to make, here is one that is really tasty and light at the same time: the cold pasta with turkey, ricotta and sun-dried tomatoes!
The secret to the success of this dish is the selection of ingredients. The AIA Oven Roasted Turkey Breast is the perfect choice, rich in taste but low in fat (only 1%), together with fresh ricotta - both cow's milk and goat's - and sun-dried tomatoes, in their oil version.
Great to take to the office as a single dish or to enjoy for dinner as a first course appetizer, the cold pasta with turkey, ricotta and sun-dried tomatoes is easy and very quick to make: here is the recipe!
Procedure
Bring a pot of water to a boil, salt it and throw in the pasta. In the meantime, prepare the cold dressing with which you will enrich the pasta shape you have chosen.
In a bowl, pour the ricotta and add a pinch of salt, a pinch of pepper, a couple of tablespoons of extra virgin olive oil and a tablespoon of pasta cooking water; mix well until you have a cream.
Take the sun-dried tomatoes, transfer them to a cutting board and cut them with a knife along with the capers; also cut the turkey into strips, then add everything to the ricotta cream and mix to combine all the ingredients.
After the necessary time for the pasta to cook, drain it and pour it into the bowl with the dressing, then tear with your hands two or three basil leaves and add them to the rest.
Mix well the pasta with turkey, ricotta and sun-dried tomatoes in the bowl with the help of a wooden spoon, then let it cool and serve.
