10 blackberries
10 juniper berries
2 cloves of garlic
A sprig of rosemary

Procedure

First, take the chicken thighs and stick a clove in each one. Then wrap them in the slices of bacon.

Take a baking tray and line it with parchment paper; place the chicken thighs on the tray and season them with a drizzle of oil, adding a pinch of salt, two cloves of garlic, the rosemary and the berries.

Cook the chicken thighs at 180°C for about 45 minutes. In the meantime, take a small pan and pour in the balsamic glaze, 4 blackberries, 4 juniper berries, some rosemary needles, water and a clove

Cook until you have obtained a homogeneous sauce that you will then strain. Once the chicken is cooked, place it on the serving dish, drizzle it with a few drops of blackberry sauce and garnish with the remaining blackberries.
