The quintessential Italian side dish is the mixed green salad, but the only salad that can be defined as the most famous in the world is undoubtedly the Caesar Salad, born in Mexico and then subsequently spread in the United States.
What you may not know, however, is that there is a bit of Italy also in the Caesar Salad: the original recipe was in fact created by chef Cesare Cardini who, having emigrated to America, knew how to make the simplest of preparations delicious and rich.
The Caesar Salad managed to conquer customers first in Tijuana, Mexico, until it crossed the borders of the Pacific Ocean and arrived from the other side of the world. It was enough to add to the Roman lettuce some croutons, the Parmigiano Reggiano in flakes, the sauce based on eggs and Worchestershire Sauce and the chicken breast, first grilled and then cut into strips.
The original recipe of the Caesar Salad represents a single dish light but energetic at the same time, perfect for those who want to stay in shape and also looking for substance. This salad is the favorite of those who are passionate about sports, those who carefully choose food pairings and, above all, those who do not want to give up taste. “Caesar's salad” is also the ideal preparation for those who have little time to cook, or who do not like to spend too much time in front of the stove.
In the original recipe, as well as in its many variations (for example with anchovies or crispy bacon), the Caesar Salad can be the ideal solution for lunch at the office or for late night dinners after a hard day's work.
So here are the ingredients and the procedure to create at home, in a few minutes, the most famous salad in the world: the Caesar Salad!
Procedure
First of all, clean the romaine lettuce, wash it under cold water and select the leaves in the center, sweeter and crunchier; break them with your hands and put them in a large salad bowl.
The second step is the preparation of the sauce: boil the egg (like the AIA Extra Fresh ground-raised eggs) for about a minute, then put it in the glass of the immersion blender together with the lemon juice, a scant tablespoon of vinegar, a slice of garlic, a teaspoon of Worcestershire sauce, a pinch of salt and a sprinkle of pepper ground.
Blend all the ingredients adding the extra virgin olive oil in a thin stream, in order to obtain a sort of mayonnaise; then let the sauce rest in the refrigerator for a few minutes.
While the sauce is firming up, prepare the grilled chicken. Heat the grill or a non-stick plate very well and cook the slices of AIA Chicken Breast 5 minutes per side.
Once ready, remove them from the heat and cut them into strips, then transfer the chicken to a plate and continue with the recipe preparation.
Take the slices of homemade bread, remove the crust and cut them into squares. Heat a tablespoon of extra virgin olive oil in a non-stick pan and toast them. When the bread has colored, remove it from the pan and set it aside.
Now you can finally compose your homemade original Caesar Salad: arrange the lettuce pieces on the bottom of the salad bowl, spread the bread croutons, then add the flakes of Parmigiano Reggiano, the strips of chicken and, finally, season with the sauce.
