Description

The BonRoll with cream of broccoli and baked carrots is a unique dish with an autumnal flavor that combines the delicacy of the broccoli cream with the strong character of the classic AIA BonRoll. In this preparation, the carrots sweeten everything, while the crème fraîche adds an extra touch, completing the dish.

Procedure

Put the Classic AIA BonRoll in a baking dish and season it with some flakes of butter and half a glass of wine. Bake at 180°C for about 70 minutes, covering it with aluminum foil for the first 50 minutes. In the meantime, peel the carrots and cut them into slices. 10 minutes before the Classic AIA BonRoll is cooked, add the carrots to the baking dish along with a sprig of rosemary.

Clean the broccoli and boil them in salted water. Once they are soft, drain them and put them in the blender with a drizzle of oil, salt, pepper and blend until you get a cream.

Then also chop the dried fruit to form a grain.

Remove the baking dish from the oven, cut the BonRoll into slices and set the carrots aside. Plate by putting the broccoli cream in the dish, a

Add the grain of dried fruit, a few drops of crème fraîche, the slices of zucchini and in the center the slices of BonRoll.
