The amatriciana pasta is part of the recipes of Italian gastronomic tradition, like the lasagna with ragù and the tortellini, that's why we are all fond of this great preparation. Enveloping, tasty and full of flavor, the amatriciana pasta can be prepared with different formats: bucatini, spaghetti, rigatoni... It's up to you to decide the best way to bring it to the table. The only real rule is to be generous with the quantities and let yourself be won over by all the flavor of these unique ingredients.

Procedure
Cut the bacon into strips and brown it in a pan with very little extra virgin olive oil.
When it is well browned, remove it from the heat and set it aside in a small bowl.
Slice the onion finely and let it wilt in the same pan as the bacon with the chili pepper cut into rings.
Crush the peeled tomatoes with a fork and add them to the onion, then cook over low heat for 10 minutes.
Add the bacon to the sauce now, adjust with salt and pepper and cook for another 10 minutes over moderate heat.
Boil the bucatini (or the pasta format you have chosen) in plenty of boiling salted water and drain them al dente.
Pour the bucatini into the sauce and, before serving, sprinkle with a grating of Roman pecorino.
Serve your amatriciana pasta piping hot!
